Our standard pork comes from Suffolk and is truly free range. We select for a high fat content which allows us to age it correctly.
We always have chops, belly and shoulder but take pleasure in offering more unsual cuts such as coppa, cheek, spare rib chop, saint louis ribs, trotters, knuckle and hand - if you know you know.
Again, due to the nature of our operation, when it's gone it's gone, so call in advance to reserve a specific cut.
We are very proud to work with Lyons Hill Farm to offer Iron Age Pork, a unique breed that combines the creamy fat of Tamworth and the rich deep flavour of wild boar. We age this to produce a range of steaks which provide a unique eating experience.
Currently, we can only source one carcass every two weeks, so as usual, ensure you order to avoid disappointment.
