We source our lamb from Essex and Kent and age it for 14 days. French trimmed rack, legs, shoulder and chops are regularly available but contact us if you need scrag, neck chops, leg steak (we use the top side), chump steak, shanks or ribs.
We strongly advise letting us marinade any of these things in our Bishops Mint Marinade. We also source Mutton and Hogget from Dorset, as well as a limited supply, closer to home from our friends in Much Hadham.
